Some simple dishes for the hot Singapore Weather

Alot of people have been asking me how has marriage changed my life? I would say I am a lucky gal, to have an adoring hubby who does more than his share of housework, wakes me in the morning and is my personal driver bleh!!! Hence, all in all, marriage life has been blissful.
One of our favourite past-times is to bake and cook....It's a liberation cos I can take my own sweet time in the preparation now!! Of cos, not all dishes are successful, but we are slowly becoming more efficient around the kitchen! This blog will not only showcase our photo, but also some of our proud creations .... I promise you won't get a diarrhoea hahahhaa

Limpet Salad

Ingredients: Canned Limpets cut into slices, shredded lettuce, chopped chilli, appropriate amt of lime juice & a tinge of sugar

Method of preparation: Soak the lettuce in water and put it in fridge for 1 hr or so to give it a crunchy texture. In a separate bowl, add chilli, lime juice and sugar to the canned limpets/ scallops and chill it in fridge. When you are abt to eat, pour the limpets mixture on top of lettuce. It's a very appetizing salad to have in the hot summer days. Try it!

Scallops with Bacon

Ingredients: Fresh scallops, bacon (you may replace this with sausages also), lemon juice (half a lemon) and broccoli (if you want a balanced diet!)

Method of Preparation: Add a little bit of olive oil in a pan and fry the bacon. After it's crisp, remove it. There'll be some bacon oil left in the pan. Add scallops and pan fry till cooked (cookbook says abt 1 min on each side). Then add bacon back in. After that, add the lemon juice and let it simmer a while and wala..it's ready to be served. Although it taste really good!!!, the dish tends to be a little on saltish side. So you may consider serving it with some boiled broccoli. =)
